Description

This Red, White & Blue Potato Salad is a colorful and refreshing dish that combines red and blue potatoes with a creamy dressing, making it perfect for summer picnics and barbecues.


Ingredients

– 1 pound red potatoes, diced

– 1 pound blue potatoes, diced

– 1/2 cup mayonnaise

– 1/4 cup Greek yogurt

– 1 tablespoon Dijon mustard

– 1/4 cup red onion, finely chopped

– 1/4 cup fresh parsley, chopped

– Salt and pepper to taste

– 2 tablespoons apple cider vinegar


Instructions

1. Boil the red and blue potatoes in separate pots until tender, about 10-15 minutes. Drain and let cool.

2. In a large bowl, mix the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, salt, and pepper.

3. Add the cooled potatoes, red onion, and parsley to the dressing and gently mix until well combined.

4. Chill in the refrigerator for at least 30 minutes before serving.

5. Serve chilled and enjoy at your summer gatherings!

Notes

For a lighter version, use more Greek yogurt and less mayonnaise. You can also add diced celery for extra crunch! Store leftovers in an airtight container in the refrigerator for up to 3 days.
