Remy’s Ratatouille Soup is a comforting and flavorful dish that celebrates the vibrant flavors of fresh vegetables. Inspired by the classic French ratatouille, this soup is a hearty and healthy option for a cozy night in.
Ingredients
– 2 tablespoons olive oil
– 1 large onion, diced
– 3 cloves garlic, minced
– 1 medium eggplant, cubed
– 1 medium zucchini, cubed
– 1 red bell pepper, diced
– 1 yellow bell pepper, diced
– 4 Roma tomatoes, diced
– 4 cups vegetable broth
– 1 bay leaf
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– Salt and pepper to taste
– Chopped fresh basil for garnish
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and minced garlic, and sauté until fragrant and translucent, about 5 minutes.
3. Add the cubed eggplant, zucchini, and bell peppers to the pot. Cook, stirring occasionally, until the vegetables start to soften, about 10 minutes.
4. Stir in the diced tomatoes, vegetable broth, bay leaf, thyme, and oregano. Season with salt and pepper to taste.
5. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
6. Remove the bay leaf. Serve the Remy’s Ratatouille Soup hot, garnished with chopped fresh basil.
Notes
For a creamier texture, you can blend a portion of the soup with an immersion blender before serving. You can also add a protein like chickpeas or shredded chicken for a more substantial meal.
