Ingredients
– 4 cups chopped fresh rhubarb
– 1 cup granulated sugar
– 1 tablespoon cornstarch
– 1 teaspoon ground ginger
– 1/4 teaspoon ground cinnamon
– 1 cup all-purpose flour
– 1/2 cup brown sugar
– 1/2 cup unsalted butter, chilled and cubed
– 1/2 cup rolled oats
– 1/4 cup chopped pecans
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine the chopped rhubarb, granulated sugar, cornstarch, ground ginger, and ground cinnamon. Toss well to coat the rhubarb.
3. In a separate bowl, mix together the all-purpose flour, brown sugar, and chilled cubed butter. Use a pastry blender or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
4. Stir in the rolled oats and chopped pecans.
5. Transfer the rhubarb mixture to a 9-inch baking dish. Sprinkle the crumble topping evenly over the rhubarb.
6. Bake for 35-40 minutes, or until the topping is golden brown and the rhubarb is tender.
7. Allow the crumble to cool for at least 10 minutes before serving. Enjoy warm, with a scoop of vanilla ice cream or whipped cream, if desired.
Notes
For a sweeter crumble, you can add 1-2 tablespoons of additional brown sugar to the topping. If you prefer a more tart flavor, reduce the amount of granulated sugar in the rhubarb filling.
