This Roasted Sweet Potato Salad combines the sweetness of roasted sweet potatoes with fresh greens and a zesty dressing, making it a nutritious and delicious meal. Perfect for lunch or dinner!
Ingredients
– 2 medium sweet potatoes, peeled and cubed
– 4 cups mixed greens (spinach, arugula, or kale)
– 1/2 cup red onion, thinly sliced
– 1/2 cup walnuts, chopped
– 1/2 cup feta cheese, crumbled
– 1/4 cup olive oil
– 2 tablespoons balsamic vinegar
– Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C).
2. Toss the sweet potato cubes with olive oil, salt, and pepper on a baking sheet.
3. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized.
4. In a large bowl, combine the mixed greens, red onion, walnuts, and feta cheese.
5. Once the sweet potatoes are done, let them cool slightly before adding to the salad.
6. Drizzle with balsamic vinegar and toss gently to combine.
7. Serve immediately or chill for later.
Notes
