Description

This Rustic Italian Potato Salad is bursting with flavor from fresh herbs and vibrant veggies, making it an ideal side dish for any occasion. Perfect for potlucks or summer barbecues!


Ingredients

– 2 pounds baby potatoes, halved

– 1 cup cherry tomatoes, halved

– 1/2 cup Kalamata olives, pitted and sliced

– 1/4 cup red onion, finely diced

– 1/4 cup fresh parsley, chopped

– 2 tablespoons fresh basil, chopped

– 1/4 cup extra virgin olive oil

– 2 tablespoons red wine vinegar

– Salt and black pepper to taste


Instructions

1. Boil the halved baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.

2. In a large bowl, combine the cooled potatoes, cherry tomatoes, olives, red onion, parsley, and basil.

3. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

4. Pour the dressing over the potato mixture and toss gently to combine.

5. Serve immediately or refrigerate for at least 30 minutes to allow flavors to meld.

Notes
