Description

Ingredients

– 1 lb Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 medium potatoes, peeled and diced

– 4 cups chicken broth

– 1 cup heavy cream

– 1 tsp dried thyme

– 1 tsp dried rosemary

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. – In a large pot or Dutch oven, cook the sausage over medium heat, breaking it up as it cooks, until browned and cooked through, about 5-7 minutes.

2. – Add the diced onion and minced garlic to the pot and sauté for 2-3 minutes, until fragrant.

3. – Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

4. – Stir in the heavy cream, dried thyme, and dried rosemary. Season with salt and pepper to taste.

5. – Ladle the soup into bowls and garnish with chopped fresh parsley before serving.

Notes

– For a thicker soup, you can mash some of the potatoes against the side of the pot.

– Substitute half-and-half or milk for the heavy cream if desired.

– Add diced celery or carrots for extra vegetables.
