This Shaved Asparagus & Fennel Salad is a light, flavorful, and refreshing side dish that’s perfect for hot summer days. Crisp, paper-thin shaved asparagus and fennel are tossed in a zesty lemon vinaigrette for a quick and easy summer delight.
Ingredients
– 1 pound asparagus, shaved into thin strips
– 1 fennel bulb, thinly sliced
– 2 tablespoons olive oil
– 2 tablespoons freshly squeezed lemon juice
– 1 teaspoon Dijon mustard
– 1 garlic clove, minced
– 1/4 teaspoon salt
– 1/4 teaspoon freshly ground black pepper
Instructions
1. In a large bowl, combine the shaved asparagus and sliced fennel.
2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
3. Pour the dressing over the asparagus and fennel, and toss gently to coat.
4. Serve the Shaved Asparagus & Fennel Salad immediately, or refrigerate for up to 2 hours before serving.
Notes
For a heartier salad, you can add cooked chickpeas, toasted nuts, or shredded chicken. This salad is also delicious with a sprinkle of grated Parmesan cheese.
