Description

This Shaved Rainbow Carrot Sesame Salad is a refreshing and crunchy side dish or light lunch option. Thinly sliced rainbow carrots are tossed in a tangy sesame dressing and sprinkled with toasted sesame seeds for a burst of flavor and texture.


Ingredients

– 1 pound rainbow carrots, peeled and shaved into thin strips

– 2 tablespoons sesame oil

– 2 tablespoons rice vinegar

– 1 tablespoon honey

– 1 teaspoon sesame seeds, plus more for garnish

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. In a large bowl, combine the shaved rainbow carrots.

2. In a small bowl, whisk together the sesame oil, rice vinegar, honey, 1 teaspoon of sesame seeds, salt, and pepper.
