Ingredients

– 1 pound large shrimp, peeled and deveined

– 2 cups basmati rice, rinsed

– 1 onion, finely chopped

– 3 cloves garlic, minced

– 1/4 cup fresh parsley, chopped

– 1/4 cup fresh dill, chopped

– 1/4 cup fresh cilantro, chopped

– 1 teaspoon turmeric

– 1 teaspoon cumin

– 1/2 teaspoon saffron threads, dissolved in 2 tablespoons hot water

– 2 tablespoons olive oil

– Salt and pepper to taste


Instructions

1. Rinse the basmati rice and soak it in water for 30 minutes.

2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

3. Add the minced garlic and sauté for an additional minute until fragrant.

4. Add the shrimp to the skillet and cook, stirring occasionally, until the shrimp are pink and opaque, about 3-5 minutes. Transfer the shrimp to a plate and set aside.

5. Drain the rice and add it to the skillet. Stir in the turmeric, cumin, and saffron water. Season with salt and pepper to taste.

6. Cover the skillet and reduce the heat to low. Cook the rice for 15-20 minutes, or until it’s tender and the liquid is absorbed.

7. Fluff the rice with a fork and stir in the chopped parsley, dill, and cilantro.

8. Gently fold the cooked shrimp back into the rice.

9. Serve hot and enjoy!
