Description

Juicy, tender chicken marinated in a bold and flavorful coconut-chili sauce, then grilled to perfection. This Spicy Coconut Grilled Chicken is a delicious and easy weeknight meal or summer BBQ staple.


Ingredients

– 1.5 pounds boneless, skinless chicken breasts

– 1 cup full-fat coconut milk

– 2 tablespoons chili-garlic sauce (or 1 tablespoon minced chili peppers)

– 2 tablespoons lime juice

– 2 tablespoons brown sugar

– 1 teaspoon ground cumin

– 1 teaspoon paprika

– 1/2 teaspoon salt

– 1/4 cup chopped fresh cilantro


Instructions

1. In a large bowl, whisk together the coconut milk, chili-garlic sauce, lime juice, brown sugar, cumin, paprika, and salt.

2. Add the chicken breasts to the bowl and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, up to 2 hours.

3. Preheat grill to medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through and charred.

4. Transfer the grilled chicken to a serving plate and sprinkle with the chopped cilantro.

5. Serve immediately, with any remaining marinade spooned over the top.

Notes

– For extra heat, add more chili-garlic sauce or fresh minced chili peppers to the marinade.

– Leftover chicken can be shredded and used in salads, tacos, or other dishes.
