Description

Indulge in the captivating flavors of Strawberry Matcha Swirl cheesecake Bars – a mouthwatering dessert that combines the bright, fruity notes of fresh strawberries with the earthy, subtle sweetness of matcha. These bars boast a creamy, swirled texture and a crunchy graham cracker crust for the ultimate sweet treat.

Ingredients

– 24 ounces cream cheese, softened

– 1 cup granulated sugar

– 1/4 cup sour cream

– 2 tablespoons all-purpose flour

– 2 eggs

– 1 teaspoon vanilla extract

– 1/2 cup chopped fresh strawberries

– 2 tablespoons matcha powder

– 1 1/2 cups graham cracker crumbs

– 6 tablespoons unsalted butter, melted

Instructions

1. Preheat oven to 325°F. Grease an 8×8-inch baking pan and line with parchment paper, leaving some overhang on the sides.

2. In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add in the sugar and beat until well combined.

3. Add the sour cream, flour, eggs, and vanilla extract. Beat until the mixture is smooth and creamy, scraping down the sides as needed.

4. In a small bowl, combine the chopped strawberries and matcha powder. Stir to coat the strawberries.

5. In another small bowl, mix the graham cracker crumbs and melted butter until well combined.

6. Press the graham cracker crust mixture into the bottom of the prepared baking pan, packing it down firmly.

7. Dollop the strawberry-matcha mixture over the crust and use a knife or offset spatula to swirl it into the cheesecake batter.

8. Bake for 35-40 minutes, or until the center is almost set. Allow the bars to cool completely in the pan before refrigerating for at least 2 hours, or up to 3 days.

9. Using the parchment paper overhang, lift the bars out of the pan and slice into 16 equal pieces.

Notes

For best results, use fresh, ripe strawberries. You can also substitute frozen strawberries if desired. Refrigerate any leftovers in an airtight container for up to 5 days.
