Ingredients
– 1 head radicchio, chopped
– 2 Granny Smith apples, sliced
– 1 cup walnuts
– 2 tbsp maple syrup
– 1/4 cup crumbled gorgonzola cheese
– 2 tbsp apple cider vinegar
– 1 tbsp olive oil
– Salt and pepper to taste
Instructions
1. – In a large bowl, combine the chopped radicchio and sliced apples.
2. – In a small skillet, toast the walnuts over medium heat for 2-3 minutes, then drizzle with maple syrup and stir to coat. Cook for 1-2 minutes more until caramelized.
3. – Add the maple-glazed walnuts and crumbled gorgonzola to the radicchio and apple mixture.
4. – In a small bowl, whisk together the apple cider vinegar and olive oil. Season with salt and pepper.
