Ingredients
– 1 tablespoon coconut oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tablespoon grated ginger
– 2 tablespoons red curry paste
– 1 cup dried red lentils, rinsed
– 4 cups vegetable broth
– 1 (13.5 oz) can coconut milk
– 2 tablespoons fish sauce
– 2 tablespoons lime juice
– Salt and pepper to taste
– Chopped cilantro, for garnish
Instructions
1. In a large pot, heat the coconut oil over medium heat.
2. Add the onion and sauté for 5 minutes, until translucent.
3. Stir in the garlic and ginger, and cook for 1 minute until fragrant.
4. Add the red curry paste and stir to coat the onion mixture.
5. Pour in the vegetable broth and red lentils. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the lentils are tender.
6. Stir in the coconut milk, fish sauce, and lime juice. Season with salt and pepper to taste.

Notes
For a creamier texture, use an immersion blender to partially blend the soup. You can also add cooked shrimp or chicken for extra protein. Serve with toasted naan bread for dipping.
