Ingredients

– 1 pound boneless, skinless chicken breasts, cubed

– 2 tablespoons Thai green curry paste

– 1 (13.5 oz) can coconut milk

– 1 tablespoon fish sauce

– 1 tablespoon brown sugar

– Juice of 1 lime

– 1/4 cup fresh cilantro, chopped

– 6 large tortillas


Instructions

1. In a large skillet, sauté the chicken over medium-high heat until browned, about 5-7 minutes.

2. Add the Thai green curry paste and cook for 1 minute, stirring constantly, to toast the spices.

3. Pour in the coconut milk, fish sauce, and brown sugar. Bring to a simmer and cook for 10-12 minutes, or until the chicken is cooked through and the sauce has thickened.

4. Remove from heat and stir in the lime juice and cilantro.

5. Divide the chicken curry mixture evenly among the tortillas. Fold the tortillas into burritos and serve immediately.
