Description

This Thai-Inspired Quinoa Salad combines vibrant vegetables with fluffy quinoa, tossed in a zesty dressing for a refreshing dish. Perfect for meal prep or a healthy lunch!


Ingredients

1 cup quinoa

2 cups water

1 red bell pepper, diced

1 cup shredded carrots

1 cup chopped cucumber

½ cup chopped green onions

¼ cup chopped cilantro

3 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon sesame oil

Salt and pepper to taste


Instructions

1. Rinse the quinoa under cold water.

2. In a pot, bring water to a boil and add quinoa.

3. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

4. Remove from heat and let it cool.

5. In a large bowl, combine the cooled quinoa, bell pepper, carrots, cucumber, green onions, and cilantro.

6. In a small bowl, whisk together soy sauce, lime juice, sesame oil, salt, and pepper.

7. Pour the dressing over the salad and toss to combine.

8. Serve chilled or at room temperature.

Notes

For added protein, consider adding chickpeas or grilled chicken. This salad keeps well in the fridge for up to 3 days.
