Ingredients
– 8 ounces rice noodles
– 1/2 cup creamy peanut butter
– 1/4 cup low-sodium soy sauce
– 2 tablespoons lime juice
– 2 tablespoons honey
– 1 teaspoon grated ginger
– 1/4 teaspoon red pepper flakes (optional)
– 2 cups shredded cabbage
– 1 red bell pepper, julienned
– 1 cup shredded carrots
– 2 green onions, sliced
– 1/4 cup chopped fresh cilantro
Instructions
1. Cook the rice noodles according to package instructions. Drain and rinse with cold water.
2. In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey, ginger, and red pepper flakes (if using).
3. Add the cooked noodles, cabbage, bell pepper, carrots, green onions, and cilantro to the peanut sauce. Toss to coat everything evenly.
4. Serve the Thai Peanut Noodles immediately, garnished with extra cilantro and lime wedges, if desired.
