Description

Discover the delightful combination of Thai-inspired flavors and nutrient-dense quinoa in this easy-to-make salad, topped with a creamy peanut dressing.


Ingredients

– 1 cup uncooked quinoa

– 1 red bell pepper, diced

– 1 cucumber, diced

– 2 carrots, grated

– 1/2 cup fresh cilantro, chopped

– 1/4 cup roasted peanuts, chopped


Instructions

1. 1. Cook the quinoa according to package instructions. Allow to cool slightly.

2. 2. In a large bowl, combine the cooked quinoa, diced bell pepper, cucumber, grated carrots, and chopped cilantro.

3. 3. In a small bowl, whisk together the peanut butter, lime juice, soy sauce, honey, and grated ginger. Add water, 1 tablespoon at a time, to thin the dressing to your desired consistency.

4. 4. Pour the peanut dressing over the quinoa salad and toss to coat evenly.

5. 5. Garnish with the chopped roasted peanuts.

6. 6. Serve chilled or at room temperature.

Notes

For a variation, add shredded chicken or tofu for extra protein. The salad can be made ahead of time and stored in the refrigerator for up to 3 days.
