Ingredients
1 cup cooked quinoa
1 cup shelled edamame (fresh or frozen)
1/2 red bell pepper, finely diced
1/4 cup red onion, finely chopped
2 tablespoons fresh cilantro, chopped
Juice of 1 lime
1 tablespoon olive oil
Salt and pepper to taste
Instructions
In a large bowl, combine the cooked quinoa and shelled edamame.
Add the diced red bell pepper, red onion, and cilantro.
Drizzle with lime juice and olive oil, then season with salt and pepper.
Gently mix until well combined.
Taste and adjust seasoning if necessary.
Serve chilled or at room temperature with crackers or fresh vegetables.
Notes
