Description

This White Bean, Cucumber, and Sumac Salad is a quick and refreshing dish that combines creamy beans with crunchy cucumbers and a zesty sumac dressing. Perfect for summer picnics or as a healthy side dish!


Ingredients

1 can (15 oz) white beans, drained and rinsed

1 medium cucumber, diced

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

2 tablespoons sumac

3 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste


Instructions

1. In a large bowl, combine the white beans, diced cucumber, chopped red onion, and parsley.

2. In a small bowl, whisk together the sumac, olive oil, lemon juice, salt, and pepper.

3. Pour the dressing over the salad and toss gently to combine.

4. Let it sit for 10 minutes to allow the flavors to meld.

5. Serve chilled or at room temperature.

Notes
