Ingredients
– 2 cups grated zucchini
– 1 egg, beaten
– 1/2 cup panko breadcrumbs
– 1/4 cup all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cloves garlic, minced
– 1 cup plain Greek yogurt
– 1 tablespoon lemon juice
– 2 tablespoons chopped fresh parsley
Instructions
1. Squeeze excess moisture from the grated zucchini using a clean kitchen towel or paper towels.
2. In a medium bowl, combine the zucchini, beaten egg, panko, flour, baking powder, salt, and pepper. Mix well to incorporate.
3. In a small bowl, mix together the minced garlic, Greek yogurt, and lemon juice. Season with a pinch of salt and pepper.
4. Heat a large skillet over medium heat and coat with a thin layer of oil.
5. Scoop heaping tablespoons of the zucchini mixture and gently flatten into patties. Fry for 2-3 minutes per side, until golden brown.
