This one-pan Cod & Potatoes in Rosemary Cream Sauce is a quick and comforting family-style meal that’s ready in just 30 minutes. Tender cod fillets are seared to perfection and nestled in a rich and fragrant rosemary cream sauce, accompanied by roasted potatoes for a satisfying and flavorful dish.
Ingredients
– 1 lb cod fillets, cut into 4 pieces
– 1 lb potatoes, diced
– 2 tbsp olive oil
– 1 cup heavy cream
– 2 tbsp fresh rosemary, chopped
– 3 cloves garlic, minced
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. Preheat oven to 400°F.
2. Toss the diced potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
3. In a large skillet, heat the remaining 1 tbsp olive oil over medium-high heat. Season the cod fillets with salt and pepper, then sear them for 3-4 minutes per side until golden brown.
4. Reduce heat to medium and add the heavy cream, rosemary, and garlic to the skillet. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
5. Add the roasted potatoes to the skillet and gently toss to coat in the rosemary cream sauce.
6. Serve the Cod & Potatoes in Rosemary Cream Sauce immediately, garnished with extra fresh rosemary if desired.
Notes
– For a creamier sauce, you can add an extra 1/4 cup of heavy cream.
