Ingredients
– 1 (20 oz) package cheese tortellini
– 2 tablespoons olive oil
– 1 small onion, diced
– 3 cloves garlic, minced
– 10 oz fresh spinach, roughly chopped
– 1 (14.5 oz) can diced tomatoes
– 1 cup heavy cream
– 1/2 cup grated parmesan cheese
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
3. Add the minced garlic and sauté for an additional minute, until fragrant.
4. Add the chopped spinach to the skillet and cook for 2-3 minutes, until the spinach is wilted.
5. Pour in the can of diced tomatoes, including the juices, and the heavy cream. Bring the mixture to a simmer.
6. Reduce heat to low and stir in the grated parmesan cheese. Season with salt and pepper.
7. Add the cooked tortellini to the sauce and toss gently to coat.
