Feta and Black Olive Cowboy Caviar is a zesty, colorful dip that combines the briny goodness of black olives and the creaminess of feta cheese. Perfect for parties or as a healthy snack!
Ingredients
1 cup black olives, pitted and chopped
1 cup feta cheese, crumbled
1 cup cherry tomatoes, diced
1 cup corn (canned or frozen)
1/2 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lime juice
Salt and pepper to taste
Instructions
1. In a large mixing bowl, combine the chopped black olives, crumbled feta cheese, diced cherry tomatoes, and corn.
2. Add the finely chopped red onion and parsley to the bowl.
3. Drizzle with olive oil and lime juice, then season with salt and pepper to taste.
4. Gently mix all the ingredients until well combined.
5. Serve immediately with tortilla chips or fresh vegetables.
