Ingredients

– 1 pound boneless, skinless chicken breasts

– 3 ripe peaches, sliced

– 4 ounces crumbled feta cheese

– 6 cups mixed greens

– 2 tablespoons olive oil

– 1 tablespoon balsamic vinegar

– 1 teaspoon honey

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat grill to medium-high heat.

2. Season the chicken breasts with salt and pepper.

3. Grill the chicken for 5-7 minutes per side, or until cooked through. Allow to rest for 5 minutes, then slice into strips.

4. In a large bowl, combine the grilled chicken, peach slices, and feta cheese.

5. In a small bowl, whisk together the olive oil, balsamic vinegar, and honey. Season with salt and pepper.

6. Add the mixed greens to the bowl with the chicken, peaches, and feta. Drizzle the dressing over the salad and toss to coat.

Notes
