Instructions
1. In a medium bowl, combine the tapioca starch, water, sugar (if using), and salt (if using). Knead the mixture until a smooth, pliable dough forms.
2. Pinch off a small amount of dough and roll it between your palms to form a small, round pearl.
3. Bring a large pot of water to a boil. Gently drop the tapioca pearls into the boiling water and cook for 15-20 minutes, or until the pearls float to the top and are translucent.
4. Drain the cooked pearls and rinse them with cold water to stop the cooking process.
5. Serve the tapioca pearls immediately in your favorite boba tea, smoothie, or dessert, or store them in an airtight container in the refrigerator for up to 5 days.
